INGREDIENTS
- 1 box penne or farfalle pasta
- 1 pint cherry tomatoes, halved
- 1/2 cup red onion thinly sliced
- 8 oz container of fresh mozzarella pearls
- 1/3 cup fresh basil
DRESSING
- 3 cloves grated or finely minced garlic
- 3/4 cup olive oil
- 1/2 cup fresh basil
- 1/4 cup fresh lemon juice
- 1 and 1/2 Tablespoons red wine vinegar
- 2 teaspoons granulated sugar
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
INSTRUCTIONS
- In a small bowl, combine dressing ingredients. Whisk and refrigerate.
- Cook pasta per box instructions. Don’t forget to salt your water before adding pasta!
- Drain pasta and pour into a medium mixing bowl. Refrigerate while preparing other ingredients.
- Remove pasta and dressing from refrigerator
- Add tomatoes, basil, basil and onions
- Fold in dressing
- Salt and pepper to taste
- Cover and chill before serving
