Tomato Basil Pasta Salad

INGREDIENTS

  • 1 box penne or farfalle pasta
  • 1 pint cherry tomatoes, halved
  • 1/2 cup red onion thinly sliced
  • 8 oz container of fresh mozzarella pearls
  • 1/3 cup fresh basil

DRESSING

  • 3 cloves grated or finely minced garlic
  • 3/4 cup olive oil
  • 1/2 cup fresh basil
  • 1/4 cup fresh lemon juice
  • 1 and 1/2 Tablespoons red wine vinegar
  • 2 teaspoons granulated sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

INSTRUCTIONS

  • In a small bowl, combine dressing ingredients. Whisk and refrigerate.
  • Cook pasta per box instructions. Don’t forget to salt your water before adding pasta!
  • Drain pasta and pour into a medium mixing bowl. Refrigerate while preparing other ingredients.
  • Remove pasta and dressing from refrigerator
  • Add tomatoes, basil, basil and onions
  • Fold in dressing
  • Salt and pepper to taste
  • Cover and chill before serving
