My Slow Cooker Chili

INGREDIENTS

  • 1lb ground Beef ( personally use 80/20, but many recipes say 90/10)
  • 1 can or bottle of beer (you can substitute beef broth)
  • 1 can diced red tomatoes
  • 1 packet of Chile Seasoning (see how to make your own below)
  • 1 little can tomato paste
  • 1 chopped jalapeño or serrano (optional)
  • 1 can kidney beans (optional)
  • 1 white onion, diced
  • 2 clove minced garlic
  • 1/2 teaspoon black pepper
  • 1 cup water

CROCK POT DIRECTIONS

Cook ground beef in a skillet until no longer pink
Add all ingredients to your crock pot and cook on low for 4 – 6 hours

STOVE TOP DIRECTIONS

Brown ground beef. Add onion, garlic plus whatever peppers you choose and cook for five additional minutes over medium heat, breaking up the ground beef into small chunks with a wooden spoon.  Add remaining ingredients and simmer for 45 minutes.

Options

1 can Rotel Diced Tomatoes with Green Chile instead of plain diced tomatoes to add a little spice

Serve with cornbread or over spaghetti

Top with shredded cheddar, sour cream and/or green onion

Add a chopped green pepper in place of jalapeno for a chunkier, less spicy option

Make your own chili seasoning by combining 2 tbs chili powder, 2 tsp each garlic powder & cumin, 1 tsp paprika and onion powder, 1/2 tsp each oregano, pepper, salt, 1/4 tsp cayenne.

Note:  The crockpot method doesn’t add anything here.  It’s just an option that would allow you to dump ingredients, set it and forget it.  But this is just as good if you do it on the stove.

Feb 28th, 2024 – I made this last night for dinner and it was so satisfying, I wanted to come check the recipe I had posted to make sure it aligned with what I threw together. Fortunately it did. Last night, I cooked some spaghetti noodles, topped with shredded cheese and then ladled on the chili. The beer I chose was a random IPA we had in the fridge. Delicious!
