Ralph or Ruthie’s Pea Salad


  • 4 cups Frozen Green Peas
  • 4 hard-boiled eggs, chopped
  • 8 oz shredded cheddar
  • 1/2 medium white onion, diced
  • 1 container grape or cherry tomatoes, quartered
  • 1/3 cup sour cream
  • 1/2 cup Hellman’s Mayo
  • 1 tsp apple cider vinegar
  • 1 tsp sugar or sugar substitute
  • 1/2 teaspoon each salt & pepper


  • In a small bowl, combine mayo and sour cream, add salt and pepper to taste.
  • Stir in 1 tsp apple cider vinegar and sugar
  • Set dressing aside, or chill while you prepare the salad
  • Thaw peas in a colander with room temp water and pat dry
  • Add peas to a mixing bowl and fold in your dressing
  • Add eggs, tomato, cheese, onion, salt and pepper. Stir gently
  • Serve or chill for later

I’m not sure whose pea salad recipe this is, but I learned it from my dad!
