Pecan Chicken Salad

INGREDIENTS

  • 3 Boneless chicken breasts
  • 1/2 cup chopped pecans
  • 1 bunch green onions, chopped
  • 1 cup Hellman’s mayo
  • 2 ribs of celery, diced
  • 1 tbs spicy brown mustard
  • 2 ribs of celery, diced
  • Salt and pepper

INSTRUCTIONS

  • Boil chicken until cooked through, approximately 25 minutes for 3 whole breasts
  • Chill for at least 30 minutes
  • Shred/chop cooked chicken and transfer to large mixing bowl
  • Add celery, pecans, green onions and mustard
  • Fold in mayo
  • Salt and pepper to taste
  • Add additional mayo as needed to achieve the texture you prefer

This recipe is super versatile. Switch it up by adding one of the following:

  • Dried cranberries
  • Halved green grapes
  • Chopped eggs
  • Chopped apple
