Guacamole

INGREDIENTS

2 large Haas avocados
1/2 of a red onion, finely chopped
3/4 cup fresh cilantro, chopped
Juice of 1 lime
1 diced jalapeno, finely chopped, deveined, de-seeded
1 tsp salt

INSTRUCTIONS
Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
Add juice of one half of a fresh lime immediately to prevent browning.
Use a fork and mash to desired consistency.
Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
Add juice of remaining lime half and then salt to taste. Stir until incorporated.
Add jalapeño to taste.

When I was in California recently, I went to a Mexican place that had an amazing guacamole. It was unique because it had these big chunks of Parmesan cheese. Try it. It’s quite good. (chunks, not shredded or grated). I sometimes also add tomato and cumin as a variation on this recipe.
