1 box spaghetti or linguine
1 bunch green onions
1 red pepper
2 TBSp Sesame Oil
1 Teaspoon fresh minced/grated ginger
1/3 cup peanut butter
1/3 cup soy suace
1/4 cup hot water
1 teaspoon cider vinegar
1 teaspoon sugar
1/4 teaspoon crushed red peper
2 tablespoons sesame seeds (I buy toasted sesame seeds because they seem to be much cheaper)
1/2 cup roasted, salted peanuts
Cook pasta in a large pot of boiling water until done. Drain.
Meanwhile, combine oil and onions in a small skillet.
Saute over low heat until tender.
Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes.
Remove from heat.
Chop remaining parts of green onion
Chop red pepper or cut into thin strips if you prefer
Toss noodles with sauce, peanuts, red pepper, remaining onions and serve.
