Peasant Salad

My take on my mom’s favorite salad. I often make this at the holidays and at Easter she told me it was better than at the restaurant.

INGREDIENTS

Salad:

  • 1 Bunch fresh spinach
  • 1/2 head iceberg lettuce, chopped
  • 1/2 red onion, thin slices
  • 4 hardboiled eggs, chopped
  • 6 slices crisp bacon, chopped
  • 6 oz (half bag) frozen peas (do not cook/thaw)
  • 6 oz shredded cheddar
  • 1 stalk celery, chopped

Dressing:

  • 1 cup Hellman’s mayo
  • 1/2 tsp pepper
  • 1 clove grated garlic
  • 1 tbs apple cider vinegar
  • 2 tsp sugar

INSTRUCTIONS

  • Combine dressing items and chill
  • Prepare salad items and add to a large mixing bowl
  • Add dressing, toss and refrigerate at least one hour prior to serving
