Smothered Beef & Bean Burritos

INGREDIENTS

  • 1 lb ground beef
  • 1/2 red onion, diced
  • 1 16 oz can refried beans
  • 1 packet taco seasoning
  • 2 cloves minced garlic
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1 10oz. can enchilada sauce
  • 12 oz shredded or sliced queso blaco with jalapeno (buy this where you buy velveeta)
  • 4 large or 6 medium flour tortillas
  • 1/4 chopped fresh cilantro

INSTRUCTIONS

  • Preheat oven to 375 degrees
  • Spray 9 x 13 baking dish with non-stick cooking spray
  • Pour half the can of enchilada sauce in the bottom of the dish
  • Brown ground beef in a skillet over medium heat
  • Add taco seasoning and 1/4 cup water. Cook for 2 minutes
  • Add onions, cook for two additional minutes
  • Add refried beans and remaining spices. Stir to combine.
  • Remove from heat and add 1/4 cup of the cheese
  • Lay out your tortillas and divide the meat mixture evenly among them
  • Fold sides in and roll, placing seam side down in baking dish
  • Pour remaining enchilada sauce over burritos and top with remaining cheese
  • Cover dish with foil and bake for 35-40 minutes
  • Garnish with your favorite topping – cilantro, olives, sour cream, avocado slices or pico.
