I recently wanted pizza, but didn’t want to make a crust. Tortillas to the rescue. The recipe below makes four servings/pizzas. You can store left overs for three days and like any pizza, you could reheat or eat the cold leftovers.
INGREDIENTS
- 8 – 8in round flour tortillas
- Pizza sauce
- 10 – 12 oz shredded pizza cheese
- Pizza toppings of your choice. I used pepperoni, sliced green olive, diced white onion and a handful of banana pepper rings
- 1 – 2 tbs vegetable or canola oil
INSTRUCTIONS
- In a skillet, heat oil over medium-high heat
- Cook tortillas one at a time until golden and slightly crispy on each side
- Prepare your assembly station. I would recommend assembling on your baking sheet now so there’s no need to lift and shift later. I did two pizzas per pan on a medium sized, parchment-lined baking sheet.
- Preheat oven to 400F
- Time to add the toppings. Add in the following order to provide stability
- Thin layer of sauce, toppings, cheese, second tortilla, sauce, toppings, cheese
- Repeat to make your three additional pizzas
- Bake at 400F for 10 – 12 minutes or until cheese is nice and melty
- Let them cool for a few minutes to set up
- Slice into quarters
