2 8-ounce sirloin steaks
4 cups lettuce washed and chopped
½ cup mozzarella cheese shredded
1/2 cup sour cream = optional
1/2 cup chopped tomatoes, pico or your favorite salsa
1 cup black beans canned
1/2 cup yellow sweet corn canned
5-6 cups cooked cilantro lime rice
Guacamole (see recipe in “Dips”) or sliced avacado
This is a great option for a weeknight meal when you’ve done weekend grilling!
In addition to grilling brats on Sunday, we threw a couple of sirloin steaks on the grill and refridgerated them overnight.
I cooked the rice in the microwave and added the juice of one lime + a fistful of chopped cilantro
I also heated my steak, corn and black beans in the microwave
I assembled all the ingredients just like in the photo and served with my homemade salsa and tortilla chips.
Great, quick and healthy meal option!
