Mashed Cauliflower

A great substitute for potatoes!

**Recipe Notes – I steamed my cauliflower, but you could also boil it. If you don’t have a steamer, you can do like I do when I’m being lazy and use a metal colander on top of a sauce pan with a few inches of water in it.

INGREDIENTS

  • 1/2 of a head of cauliflower, chopped into medium-sized florets
  • 1/2 block of cream cheese
  • 3 tbs butter
  • 1 cup grated cheddar cheese
  • 4 slices cooked bacon crumbled
  • 4 green onions, chopped
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

INSTRUCTIONS

  • Cook cauliflower until very tender
  • Add it to a pot or saucepan
  • Add butter & cream cheese
  • Cook on low heat until butter and cream cheese have melted, stirring occasionally
  • Mash with a potato masher, hand mixer, wooden spoon or whatever you have handy
  • Add cheddar cheese, bacon and green onions
  • Cook for a couple of minutes until your cheese begins to melt
  • Enjoy!
