Chocolate Chunk Pecan Pie Bars

INGREDIENTS

  • 1 1/2 cups flour
  • 1 stick butter, cold, chopped into approximately 1/4 inch pieces
  • 1/4 cup packed brown sugar
  • 3 large eggs
  • 3/4 cup corn syrup
  • 2 tbs butter, melted
  • 3/4 cup white sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chunks (or chips)
  • 2 cups pecans

INSTRUCTIONS

  • Preheat oven to 350 degrees
  • Lightly spray a 9 x 13 pan with non-stick cooking spray or line with parchment
  • In a food processor combine flour, butter and brown sugar until a dough becomes crumbly and starts to stick together. (butter must be cold)
  • Gently press into pan
  • Bake for 13 minutes, or until lightly browned. Remove from oven and set aside
  • Mix together eggs, corn syrup, white sugar and vanilla
  • Stir in melted butter, followed by pecans and chocolate chunks
  • Pour mixture onto crust layer. Bake for approximately 25-30 minutes or until browned and set
  • Cool for at least an hour before cutting
