INGREDIENTS
- 4 cups Frozen Green Peas
- 4 hard-boiled eggs, chopped
- 8 oz shredded cheddar
- 1/2 medium white onion, diced
- 1 container grape or cherry tomatoes, quartered
- 1/3 cup sour cream
- 1/2 cup Hellman’s Mayo
- 1 tsp apple cider vinegar
- 1 tsp sugar or sugar substitute
- 1/2 teaspoon each salt & pepper
INSTRUCTIONS
- In a small bowl, combine mayo and sour cream, add salt and pepper to taste.
- Stir in 1 tsp apple cider vinegar and sugar
- Set dressing aside, or chill while you prepare the salad
- Thaw peas in a colander with room temp water and pat dry
- Add peas to a mixing bowl and fold in your dressing
- Add eggs, tomato, cheese, onion, salt and pepper. Stir gently
- Serve or chill for later
