A great substitute for potatoes!
**Recipe Notes – I steamed my cauliflower, but you could also boil it. If you don’t have a steamer, you can do like I do when I’m being lazy and use a metal colander on top of a sauce pan with a few inches of water in it.
INGREDIENTS
- 1/2 of a head of cauliflower, chopped into medium-sized florets
- 1/2 block of cream cheese
- 3 tbs butter
- 1 cup grated cheddar cheese
- 4 slices cooked bacon crumbled
- 4 green onions, chopped
- 1/4 tsp garlic powder
- Salt and pepper to taste
INSTRUCTIONS
- Cook cauliflower until very tender
- Add it to a pot or saucepan
- Add butter & cream cheese
- Cook on low heat until butter and cream cheese have melted, stirring occasionally
- Mash with a potato masher, hand mixer, wooden spoon or whatever you have handy
- Add cheddar cheese, bacon and green onions
- Cook for a couple of minutes until your cheese begins to melt
- Enjoy!
