Since moving to the middle of nowhere, I prepare a meal six nights a week. Almost all of these are made after a long drive home from the office. The key for us is in the planning. I choose one day in the week and that is “meal prep day”. For example, if we grill steaks or burgers on a Sunday, we’re also grilling chicken and pork for the next two nights. I also use my slow cooker at least one per week. In addition to soups, stew and chilies, I have found that the slow cooker is a great place to make Chinese food. Seriously, try that General Tso Chicken meal. Love it!
