Chinese Chicken Salad

While trying to come up with something different, quick and summery, I made this salad. We both loved it. You can use what ever type of chicken preparation you prefer. So far I have made it with baked chicken and grilled chicken. You could boil and shred chicken, or even use a rotisserie chicken from the grocery.

INGREDIENTS

  • 2 cups cooked chicken
  • 4 diced green onions
  • 1/2 of a green pepper, diced
  • 1/2 bag of cole slaw mix
  • 1/2 head of iceberg lettuce, roughly chopped
  • 2 -3 oz Chow Mein noodles
  • 1 – 2 oz sliced or slivered almonds
  • House of Japan Ginger Dressing (see my recipe) or whatever type of bottled Asian dressing sounds good to you.
  • Salt and pepper to taste

INSTRUCTIONS:

Nothing to it. Combine and serve. I love the texture from the almonds and Chow Mein noodles. If you want to reduce your cost per serving, make your own cole slaw mix by using fresh cabbage and carrots.
