The crustless taco pie I made last week was SO good, I decided to try another version. This will serve 6 -8, but it freezes nicely!
INGREDIENTS
- 4 large eggs
- 2/3 cup heavy cream
- 1/2 teaspoon salt
- 1/2 tsp black pepper
- 1 10 oz bag of pre-washed spinach from your produce department
- 2 cups shredded cheese of your choice
- 8 slices cooked bacon
- 1/2 medium onion
INSTRUCTIONS
- Preheat over to 350
- Whisk eggs, cream, salt and pepper until thoroughly combined in a large bowl
- Add spinach, onions and 1/2 of your shredded cheese
- Stir until your spinach is coated with the egg mixture
- Coat a deep die pie plate or casserole dish with cooking spray
- Add half of your spinach mixture
- Sprinkle with 1/2 of your bacon
- Add the remaining spinach mixture
- Add the remaining bacon and top with the remaining cheese
- Bake for 35-40 minutes or until edges begin to brown
- Let cool for 5 – 20 minutes
- Enjoy!
