Crustless Spinach and Cheese Pie with Bacon

The crustless taco pie I made last week was SO good, I decided to try another version. This will serve 6 -8, but it freezes nicely!

INGREDIENTS

  • 4 large eggs
  • 2/3 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 tsp black pepper
  • 1 10 oz bag of pre-washed spinach from your produce department
  • 2 cups shredded cheese of your choice
  • 8 slices cooked bacon
  • 1/2 medium onion

INSTRUCTIONS

  • Preheat over to 350
  • Whisk eggs, cream, salt and pepper until thoroughly combined in a large bowl
  • Add spinach, onions and 1/2 of your shredded cheese
  • Stir until your spinach is coated with the egg mixture
  • Coat a deep die pie plate or casserole dish with cooking spray
  • Add half of your spinach mixture
  • Sprinkle with 1/2 of your bacon
  • Add the remaining spinach mixture
  • Add the remaining bacon and top with the remaining cheese
  • Bake for 35-40 minutes or until edges begin to brown
  • Let cool for 5 – 20 minutes
