INGREDIENTS
1 box spaghetti or linguine
1 bunch green onions
1 red pepper
2 tbs Sesame Oil
1 tsp fresh minced/grated ginger
1/3 cup peanut butter
1/3 cup soy sauce
1/4 cup hot water
1 tsp cider vinegar
1 tsp sugar
1/4 tsp crushed red pepper
2 tbs sesame seeds (I buy toasted sesame seeds because they seem to be much cheaper)
1/2 cup roasted, salted peanuts
INSTRUCTIONS
Cook pasta in a large pot of boiling water until done. Drain.
Meanwhile, combine oil and onions in a small skillet.
Sauté over low heat until tender.
Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes.
Remove from heat.
Chop remaining parts of green onion
Chop red pepper or cut into thin strips if you prefer
Toss noodles with sauce, peanuts, red pepper, remaining onions and serve.
