INGREDIENTS
- 1 lb ground beef
- 1/2 red onion, diced
- 1 16 oz can refried beans
- 1 packet taco seasoning
- 2 cloves minced garlic
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1 10oz. can enchilada sauce
- 12 oz shredded or sliced queso blaco with jalapeno (buy this where you buy velveeta)
- 4 large or 6 medium flour tortillas
- 1/4 chopped fresh cilantro
INSTRUCTIONS
- Preheat oven to 375 degrees
- Spray 9 x 13 baking dish with non-stick cooking spray
- Pour half the can of enchilada sauce in the bottom of the dish
- Brown ground beef in a skillet over medium heat
- Add taco seasoning and 1/4 cup water. Cook for 2 minutes
- Add onions, cook for two additional minutes
- Add refried beans and remaining spices. Stir to combine.
- Remove from heat and add 1/4 cup of the cheese
- Lay out your tortillas and divide the meat mixture evenly among them
- Fold sides in and roll, placing seam side down in baking dish
- Pour remaining enchilada sauce over burritos and top with remaining cheese
- Cover dish with foil and bake for 35-40 minutes
- Garnish with your favorite topping – cilantro, olives, sour cream, avocado slices or pico.
