Earlier this week the guy I sit next to at work said, “Do you like egg rolls?”. ME: “Um yes, DUH. I love all Asian food.” He preceded to tell me about a recipe he and his wife had tried and loved – Egg roll in a bowl. I of course confirmed that I was familiar with this dish, and by the end of the conversation gave him six additional varieties to consider. Last night I made yet another version which used thin slices of boneless pork chops. It wasn’t my favorite version, but it was yummy. This got me thinking about how much cabbage we eat. You really, really have to be creative eating keto. That means creating new dishes out of the same foods. The only time I ate cabbage pre-keto was in cole slaw. I’ve never had anything against it, cabbage was just not something I used that often. That said, like cauliflower and zucchini, it is truly one of THE most versatile veggies out there. I use it in salads, stir fry, soups and sides.
In other news, I have entered the HGTV 2020 Dream Home Sweepstakes. I pretty sure I will win! I’m not sure what prompted me to do this as I am typically very cautious about sharing PII info online. I think it’s because this year’s home is in Hilton Head, SC which would be an amazing place to live. I know that JDub doesn’t get my desire to move south, but I am determined to do it. Even if it is only for a few months out of the year. Winter sucks!
