INGREDIENTS
- I lb ground beef
- 1 can black beans
- 1 pkg taco seasoning
- 1 can corn
- 1 can diced tomatoes
- 1 jalapeno or poblano pepper, diced
- 2 cups shredded cheddar or Mexican blend cheese
- 1 box Jiffy cornbread mix
- 1 egg
- 1/3 cup milk
- 1/3 cup water
- 1/2 white or yellow onion, diced
- 2 cups sour cream
INSTRUCTIONS
- Prepare cornbread mixture per package instructions. Spread into a 9 x 13 baking dish
- Bake 15 minutes at 350 and remove from oven
- Add ground beef to skillet and brown over medium heat
- Drain excess grease
- Add taco seasoning and water
- Stir in onions and peppers. Cook for 5 minutes
- Add corn, black beans and diced tomatoes
- Simmer for three minutes
- Spread beef mixture over cornbread
- Fold 1/2 of your shredded cheese into sour cream
- Gently spread sour cream mixture over meat
- Sprinkle remaining cheese over casserole
- Bake for 30 minutes
- Remove from over and allow to sit for 5 – 10 minutes prior to serving
OPTIONAL
- Top each serving with shredded lettuce, slice black olives and cilantro
