Taco Cornbread Casserole

INGREDIENTS

  • I lb ground beef
  • 1 can black beans
  • 1 pkg taco seasoning
  • 1 can corn
  • 1 can diced tomatoes
  • 1 jalapeno or poblano pepper, diced
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 box Jiffy cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1/3 cup water
  • 1/2 white or yellow onion, diced
  • 2 cups sour cream

INSTRUCTIONS

  • Prepare cornbread mixture per package instructions. Spread into a 9 x 13 baking dish
  • Bake 15 minutes at 350 and remove from oven
  • Add ground beef to skillet and brown over medium heat
  • Drain excess grease
  • Add taco seasoning and water
  • Stir in onions and peppers. Cook for 5 minutes
  • Add corn, black beans and diced tomatoes
  • Simmer for three minutes
  • Spread beef mixture over cornbread
  • Fold 1/2 of your shredded cheese into sour cream
  • Gently spread sour cream mixture over meat
  • Sprinkle remaining cheese over casserole
  • Bake for 30 minutes
  • Remove from over and allow to sit for 5 – 10 minutes prior to serving

OPTIONAL

  • Top each serving with shredded lettuce, slice black olives and cilantro
