Mashed Potato Casserole with Fried Chicken

Have you seen those commercials from KFC for their chicken bowls? I found this recipe and it reminded me of those… just on a larger scale. JDub told me she needs easy family recipes. I think this one sounds yummy.

INGREDIENTS

  • 2 paccks Bob Evans Mashed Potatoes (or make your own which is cheaper)
  • Bag of frozen corn
  • 8 oz bag shredded cheddar (or shed your own which is always better)
  • 12 Frozen Crispy Chicken Tenders
  • Brown Gravy Mix or Jar of Kroger Brown Gravy

INSTRUCTIONS

  • Bake your chicken strips per package instructions
  • Heat your potatoes per package instructions
  • Your casserole will bake at 350 so adjust the oven temp as needed after your chicken is done
  • Coat your casserole dish with cooking spray for easier cleaning
  • Scoop your potatoes into the dish
  • Top with a layer of frozen corn
  • Dice your chicken strips into bite-sized pieces
  • Add chicken to the casserole dish
  • Top with shredded cheddar
  • Bake your casserole at 350 for 15 minutes or until cheese is melty
  • While the casserole is baking prepare your gravy mix, or if using Jar gravy warm it in the microwave.
  • Remove your casserole from the oven and drizzle with gravy
