INGREDIENTS
- 4 ears fresh corn
- 1/2 cup mayo
- 1/4 tsp chili powder
- 1/8 tsp garlic powder
- 1/8 tsp black pepper
- 1/8 tsp cumin
- 1 tsp lime juice
- 3 tsp cilantro, chopped (optional)
- 1/4 cup Cotija cheese, grated (optional)
INSTRUCTIONS
- Remove corn from husks and soak in cold water for at least 30 minutes prior to cooking (do you have to do this? No. Sometimes I go straight to the grill. Soaking the corn first just helps it stay moister)
- Preheat grill to medium/high heat
- Combine mayo, spices and lime juice
- Baste corn with mayo mixture
- Place corn on the grill. Grill for 12 – 15 minutes, turning every 4-5 minutes
- Remove corn from grill and garnish with cilantro and Cojita
