Easy Grilled Mexican Street Corn

INGREDIENTS

  • 4 ears fresh corn
  • 1/2 cup mayo
  • 1/4 tsp chili powder
  • 1/8 tsp garlic powder
  • 1/8 tsp black pepper
  • 1/8 tsp cumin
  • 1 tsp lime juice
  • 3 tsp cilantro, chopped (optional)
  • 1/4 cup Cotija cheese, grated (optional)

INSTRUCTIONS

  • Remove corn from husks and soak in cold water for at least 30 minutes prior to cooking (do you have to do this? No. Sometimes I go straight to the grill. Soaking the corn first just helps it stay moister)
  • Preheat grill to medium/high heat
  • Combine mayo, spices and lime juice
  • Baste corn with mayo mixture
  • Place corn on the grill. Grill for 12 – 15 minutes, turning every 4-5 minutes
  • Remove corn from grill and garnish with cilantro and Cojita
