Sort of what I’ve done for most of my career. Solve problems and manage other people who solve problems. My current problem is that my job is awful. It is 11-12 hours a day of being set up to fail and making people unhappy, and then standing up, walking downstairs and having to cook while S finishes up his equally long and shitty day. It’s sad how what was once good and respected has been burned to the ground by a singular goal of SELL COMPANY FOR BIGGEST PROFIT POSSIBLE. Hey, I don’t begrudge any company wanting to make a lot of money. There’s a line though, that these people have crossed. So most days I think, “Give me the strength to get through it. It’s almost time to retire”.
I’m a planner. Always have been. I am rarely a procrastinator. I may sometimes procrastinate with things I can’t do myself, or things that can actually wait. I also like lists. So in an effort to solve one of my current predicaments, I have been slowly but surely doing more meal planning and more prep. Unfortunately it’s not quite enough some days. So this weekend I am taking it to the next level with freezer meals. On the agenda are: Cabbage rolls, Mexican lasagna, broccoli cheese casserole, chicken and noodles and meatloaf. I’ll let you know how it goes!
All in all I would say that this was very successful. I bought these containers on Amazon. I was not able to complete my broccoli cheese casserole because I forgot an ingredient. I’ll have to finish it tomorrow. I was able to complete cabbage rolls, which filled three of these containers. I also made two Mexican lasagnas, three small meatloaf, 1 container of homemade Mexican rice, three containers of chicken noodles. For reheating, I will pull these out of the freezer 24-28 hours ahead of time to thaw in the refrigerator. Then I will reheat in the oven at 350. Each meal is cooked, so it’s just about getting it heated.
