As we are approaching the two year anniversary of quest to eat healthier and become more physically fit, we reflected this week on the wonder food. That’s right. It’s cauliflower. I seriously don’t know if we could have been as successful as we’ve been without it.
Here is a list of recipes I’ve made that have used cauliflower to replace the main, and less healthy ingredient. I lovingly refer to these as “faux” dishes.
- Mac & Cheese
- Garlic mashed potatoes
- Pizza Crust
- Baked Ziti
- Shrimp and grits
- Loaded mashed potatoes
- Egg mustard potato salad
- Chipotle-style bowls with rice
- Fried Rice
I have not had pasta, rice or bread in two years. Don’t get me wrong, I could sit down with a warm loaf of sourdough bread and a dish of melted butter and finish off the whole thing, but cauliflower has been a good replacement for rice and pasta. It doesn’t replace bread, but it makes a pretty darned good pizza crust!
